Sinhalese pickle - Billing pickle

Billing pickle is a sour side dish usually eaten with rice in Sri Lanka. This is made using the Billing fruit.

INGREDIENTS

  • 1/4 cup Dried Biling

  • 4 Onions

  • 50g Dry Sprats

  • 6 Cloves Garlic

  • 2-3 Green Chillies

  • Rampe & Curry Leaves

  • 1 tbs Maldives Fish

  • 2 -3 tbs Vinegar

  • 2 tsp Roasted Curry Powder

  • 1 tsp Roasted Chili Powder

  • Lime & Sal soling aste

  • Oil for frying

METHOD

      1. Fry the onions into a light brown color
      2. Fry the sprats
      3. Fry the green chilies and garlic (garlic does not have to be brown in color)
      4. Carefully fry the dried billing (could burn easily)
      5. Fry the curry leaves and rampe
      6. Fry the Maldive fish
      7. Take a clay pot and add some vinegar.
      8. Break the sprats into pieces.
      9. When the vinegar is heating turn off the stove and add some salt, roasted curry powder and chile powder
      10. Turn on the stove, add all the other ingredients which were fried before and mix it well.
      11. When the dish is mildly hot add some lime juice and mix well.
      12. When the mixture is not hot anymore store the billing pickle in clean, dry bottles
