Saamai Kanji (Mullaitivu)

Saami rice porridge is made by boiling rough, tough saamai ‘rice’ for a long period till it reaches a mushy consistency. With the addition of smooth, soporific coconut milk, the end result is a warm, comforting and filling porridge.

  • COOKING TIME; 1 HR
  • SERVINGS; 4

INGREDIENTS

  • 1 cup saamai rice (‘little millet’)

  • 3 cups water

  • Salt to taste

  • 1/2 cup coconut milk

  • 1tbsp sugar (if desired)

METHOD

  • In a saucepan, bring water to boil. Meanwhile, wash and drain saamai rice

  • When water has boiled, add rice and salt. Stir frequently while cooking.

  • When rice is cooked (overcooked, really) to a mushy, porridge-like consistency if desired and stir till dissolved. Remove from heat. Serve warm.
