Saami rice porridge is made by boiling rough, tough saamai ‘rice’ for a long period till it reaches a mushy consistency. With the addition of smooth, soporific coconut milk, the end result is a warm, comforting and filling porridge.
1 cup saamai rice (‘little millet’)
3 cups water
Salt to taste
1/2 cup coconut milk
1tbsp sugar (if desired)
In a saucepan, bring water to boil. Meanwhile, wash and drain saamai rice
When water has boiled, add rice and salt. Stir frequently while cooking.
When rice is cooked (overcooked, really) to a mushy, porridge-like consistency if desired and stir till dissolved. Remove from heat. Serve warm.
