Uppu kanji is a savoury rice porridge. It's a restorative dish, filled with goodness despite being so light. Uppu kanji is often prepared to strengthen a person in times of ill health. It is usually paired with a spicy accompaniment like a pickle or chutney.
1/4 cup long-grain rice (red or white), parboiled rice or broken rice
1 1/2 liters water
3 cloves garlic, finely chopped
1 cm slice fresh ginger
1 tsp ground peppercorns
1/4 cup coconut milk
Salt to taste
Crush uncooked rice in a mortar and pestle or use ‘pulse’ action in a food processor to break the rice to a rough texture. Broken rice needs grinding.
Place rice, garlic and ginger in a saucepan and cover with water. Boil till rice practically dissolved in water (it should look like cloudy water)
Simmer, for further 2-3 minutes
And ground paper and/or coconut if desired.
Remove from heat and add salt to taste. Mix well and serve hot.
