Another name for pol pani pancakes in Sri Lanka is wellawahum. This sweet delicacy is enjoyed for breakfast or as a tea time snack. It pairs well with a cup of plain or ginger tea.
Wheat flour 250g
Sugar 250g
Medium size coconut 1
coconut oil
Pinch of salt
2 cardamom
Turmeric powder
How to make the batter :Mix the wheat flour with coconut milk (some mix the batter with cold water)
Add a pinch of salt and turmeric powder
mix all together into a thick batter
Apply some coconut oil on a hot pan
pour some batter on the stove
When one side is done, turn upside down (the pancake should not be too brownish in color)
take out the pancake out of the pan
put some pol pani on the pancake
Roll the pancake while it's hot
How to make pol pani :Mix sugar with some scraped coconut
add the cardamom
keep the mix on a hot stove and keep stirring.
Pol pani should not be too solid and burnt
take it out of the stove when the mixture is light brown
